Barbeque Chicken Rice

Wednesday, April 22, 2009
2 Boneless Skinless Chicken Breasts
2 Cups White Rice, uncooked
4 Cups Water
1 Cup Barbecue Sauce
1 Teaspoon Salt
1 Teaspoon Black Pepper
1/2 Teaspoon Garlic Powder
1/2 Teaspoon Onion Powder
Set your slow cooker to low and pour in the water, then put the chicken in. Slather half of the barbecue sauce on the chicken, then sprinkle with salt, pepper, garlic powder, and onion powder. Put the lid on and cook for 8 hours. Take the chicken out and shred it, leaving some bigger pieces. While the chicken is out of the slow cooker, pour the other half of the barbecue sauce in the broth and mix it in well. Pour the broth into a strainer over a bowl. Pour 4 cups of the broth into a saucepan and bring to a boil. Add rice and turn the heat to low while rice cooks. In the meantime add the chicken back into the slow cooked and turn set it to keep warm (if yours doesn't have this function, just set it to low). When the rice is done, pour it into the slow cooker and mix it with the chicken, carefully not to break the chicken up too much.
