2 tablespoons walnut oil
1/2 cup chopped green onion
1 teaspoon minced garlic
1/2 cup jasmine rice
1 cup chicken broth
1/4 cup chopped toasted walnuts
1/4 teaspoon ground black pepper
1/8 teaspoon salt
chopped fresh parsley, for garnish
In a medium saucepan, heat walnut oil over medium heat. Add green onion and garlic; cook for 2 minutes, stirring constantly. Add rice; cook for 3 minutes, stirring constantly. Add chicken broth; bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes. Remove from heat; let stand covered for 10 minutes. Fluff rice with a fork. Add toasted walnuts, pepper, and salt, stirring to combine well. Garnish with chopped fresh parsley, if desired.
